Italian Roast Chicken Salad

With lean chicken breast for a protein recovery punch, roast pumpkin for a quality carbohydrate source, and a wealth of herby Italian flavour makes this Italian Roast Chicken Salad is a classic you will always come back to!

Serves 4


  • 500g Chicken Breast (Raw)
  • 500g (1 large bag) mixed lettuce
  • 1 Medium Red Onion
  • 1 Large Carrot
  • 2 Medium Lebanese Cucumber
  • 1 Large Tin Australian Baby Beetroots
  • 1 Large Red Capsicum
  • 10 Semi Dried Tomatoes
  • Italian Herb Mix
  • Ground Cinnamon
  • Extra Virgin Olive Oil Spray


  1. Heat oven to 200 degrees.
  2. Cut pumpkin into small cubes, place in baking dish and coat with ground cinnamon and a small spray of extra virgin olive oil, bake for 45-60 minutes stirring occasionally.
  3. Coat raw chicken breast in Italian her mix, and pan fry until cooked with the herb mix acting as a crust.
  4. Cut chicken into this slices, and let cool.
  5. Remove pumpkin from oven once cooked, and allow to cool.
  6. Cut all salad ingredients and place into a large bowl (be sure to grate carrot finely).
  7. Thinly slice semi dried tomatoes.
  8. Add pumpkin and chicken to salad and mix thoroughly.
  9. Serve with a splash of balsamic vinegar.
  10. Enjoy!
