Grilled Peach & Goats Cheese Salad
Summer fruits are a fantastic way to add some unique flavours to your summer salads.
This grilled peach and goats cheese salad is brimming with vitamins and minerals, and could happily sit within the menu of any top class restaurant.
For those athletes, the addition of peaches in this salad provides a boost of calcium, potassium, magnesium, zinc and fiber to bolster your electrolyte and trace element intake.
2 x medium peaches (char grilled in griddle pan without any added oils until char marks are visible)
1 x extra large bag of mixed letture
2 x medium lebanese cucumbers
250g perino baby tomatoes OR 2 medium ripe truss tomatoes
1 x large red capsicum
1 x medium tin baby beetroots (drained and rinsed)
40 grams high quality creamy goats cheese
Grill peaches until char marks are evident (using griddle pan without any added oils or fats)
Slice salad ingredients and add to mixed lettuce in large serving bowl.
Add half the goats cheese and mix through salad
Crumble remaining goats cheese on top of salad
Add grilled peaches on top of salad just prior to serving
